Almond Butter Cookies (with White Chocolate Chips)

Sometimes you just need to bake, I get the itch fairly often, and now that Fall is here I just can’t help myself. Last night I didn’t have any bananas to use up, or fruit in my freezer, chocolate chip cookies were not the answer…so what did I do? Well duh? I looked for a little inspiration on Pinterest of course! I saw a few different variations of Almond Butter Cookies and decided to adapt this one. I don’t know about you but I have never been a big peanut butter fan, I will eat it but I probably would choose something else if I could.

The first time I tried Almond Butter I was completely sold, I like the flavor much more than peanut butter. And to be honest after making these almond butter cookies I don’t think I will going back to the traditional peanut butter cookies anytime soon!

Almond Butter Cookies with White Chocolate Chips – Adapted from Good Life Eats

Makes about 32 Cookies.


1 & 1/4 Cups of Flour

1/4 Teaspoon of Baking Soda

1/4 Teaspoon of Baking Powder

1/2 Teaspoon of Salt

8 Tablespoons (1 Stick) of Butter, softened

1/2 Cup Light Brown Sugar

1/2 Granulated Sugar

1/2 Cup Almond Butter

1 Large Egg

1 & 1/4 Teaspoons of Vanilla

1/2 Cup of Almond Flour (you can also substitute coarsely chopped almonds)

1 Cup of White Chocolate Chips (optional)


Line baking sheet with parchment paper or grease your cookie sheet accordingly. Preheat oven to 350 degrees Fahrenheit.

Combine flour, baking soda, baking powder and salt in a bowl and set aside. Beat butter until creamy and then add the white and brown sugar, continue beating until fluffy. Be sure to scrape the bowl with a spatula to ensure all ingredients are well combined. ( I find that there is always a large butter clump in the bottom of my kitchenaid mixing bowl).

Beat in the almond butter and vanilla until combined and then beat in the egg. Gently stir in your bowl of dry ingredients. Once combined, add the almond flour and white chocolate chips and stir until they are incorporated.

Roll cookies into balls, about 2 tablespoons of dough in each ball. (I used this portion scoop and it worked like a dream) Lightly flour a fork and press the dough balls down in a crisscross pattern. Bake for 10-12 minutes, until the edges are slightly brown. Let the cookies cool for a couple of minutes on the cookie sheet before transferring to a cooling rack.

Target is known for partnering with designers to showcase capsule collections including Missoni and Zac Posen. The new list includes Alice + Olivia, Diane von Furstenberg, Tory Burch and Marc Jacobs.

I had my first one yesterday and it was glorious. It is easily my favorite caffeinated beverage and to say that I am excited about it is really an understatement. I captioned this Instagram photo “looks like summer, tastes like fall”. So appropriate for this beautiful Vancouver weather, I absolutely love Fall but I am not sure if I am ready for it quite yet!

Umm can I have some more? This was for sure one of the most delicious beverages I have tried in a while. And now I am on the hunt to find it so I can stock my fridge.

I told you how much I loved these when I went to Lucky’s Doughnuts and now I have a whole set to call my very own. Don’t you love it when people pay attention to you? Tea party anyone?

Caprese Breakfast Sandwich

Sorry I missed you on Monday I was busy sleeping away the 11 hour car ride home. I literally did not sleep on Sunday night after Andrew’s team won the NSA World Series.

So exciting, and the first team ever from British Columbia to earn the honor! Sorry I just had to brag a little bit, even though I had no part in it (other than drinking Palm Bays all weekend). I bet you are wondering how on earth this relates to breakfast, well this breakfast sandwich is quite possibly the best one I have ever had, and it makes a fantastic substitute for dinner when you have slept the day away are looking for something quick and easy or if you need to take something on the run.

Caprese Breakfast Sandwich


1 whole wheat bun

1 Large Egg

1 Tablespoon garlic mayonnaise

5-10 fresh basil leaves

3 Slices of roma tomato

3 slices of bocconcini cheese (the large balls)you can also substitute buffalo mozzarella

Salt and pepper to taste

Instructions you probably don’t need these, it’s pretty simple, but hey, a little direction never hurt right?!

Cook your egg to your liking. I prefer over easy, I like the yolk to be nice and runny. Just before it is done top with the bocconcini cheese

While your egg is cooking assemble the sandwich; garlic mayo, basil, tomato.

Top with the cheesy egg and enjoy!

The Last Thing I…

Ate. Overnight Oats. I have been making these for breakfast a few times a week lately because they are so freaking good. Not only do they taste good, they are pretty darn good for you too! Even better, you make them night before so they are ready to go first thing in the morning. I am all about convenience in the morning, anything for those few extra minutes in bed. I gave you a brief explanation a couple of weeks ago but I have tweaked it to perfection. So here is the official recipe:

Overnight Oats

1/3 cup old fashioned oats (don’t use instant or quick cooking – I did this the first time and it was a giant FAIL)

1 teaspoon chia seeds and/or ground flax ( I do a tsp of each)

1 Cup Milk ( I like to alternate between almond and coconut milk but you can use regular dairy milk too)

Put everything into a container that you can seal, give it a stir and refrigerate overnight. I like to top it with fresh fruit and that’s it, breakfast in a snap!

Coveted online. These amazing high waist sailor shorts on the Frock Candy Website, I NEED them. Seriously I do, they are definitely on my list of summer staples. But I should probably try a pair on just in case my ass looks huge…probably an intelligent plan.
