Sometimes I just get on a mission, I am definitely a right now kind of girl. So last week, when I came across a recipe for Blueberry Crumble Bars I instantly wanted to make them. Except there was not a blueberry to be found in my household, nor did I have pastry flour. But I did find raspberries in my freezer, whole wheat flour and rolled oats so I improvised and something delicious happened.
Sometimes being a right now kind of girl works in your favor.
Raspberry Oatmeal Bars
Ingredients
1.5 Cups of Rolled Oats
3/4 Cup of Whole Wheat Flour
3/4 Cup Brown Sugar
1/4 Teaspoon of salt
1 Teaspoon of Cinnamon
1 Teaspoon of Vanilla Extract
1/2 Cup Butter (I used margarine)
1 Cup Raspberries (frozen or fresh)
Instructions
Pre heat your oven to 350 degrees fahrenheit and grease an 8 x 8 baking pan.
In a large bowl combine flour, sugar, oats, cinnamon and salt. Mix until the ingredients are combined.
Melt the butter/margarine in a saucepan over medium heat. StirĀ in the vanilla and add this to the oat mixture.Stir until it is moistened and then fold in the raspberries.
Press the batter into the pan and bake for 20 minutes, let it cool completely, cut and serve.
Store the remainder of the bars in the fridge.
