It’s Thursday, which means tomorrow is Friday, which means today is a good day. Take my advice and just go with it, deal? Okay good!

The Last Thing…

I Made. This One Earth Chia Chia Coconut Cookie Mix

Holy was it good! You know me, I like to bake, but it is almost always from scratch. I was a little bit skeptical about these wheat free cookies, but my goodness was I wrong. They were delicious. They had a slightly different texture than a regular cookie, but it was by no means a bad thing, they were moist and chewy, packed with fiber, and had great flavor . Not only will I make them again, I can’t wait to try more One Earth products, specifically the Banana Quinoa Granola Bar Mix.

Pinch of Yum‘s Butternut Squash Mac ‘n’ Cheese with Bacon, Caramelized Onions, and Apples. Enough said!

I Downloaded. The VSCO CAM App. And let me tell you it’s worth every one of the 99 pennies it cost. Here is a before, and after of a photo I took.



You really want those carrots, I know you do! The VSCO Camera app has quite a few more settings, and editing capabilities in comparison to other camera apps I have used. I was able to edit this photo, save, and then upload it to Instagram without adding any additional filters. I think I am in love.

Almond Butter Cookies (with White Chocolate Chips)

Sometimes you just need to bake, I get the itch fairly often, and now that Fall is here I just can’t help myself. Last night I didn’t have any bananas to use up, or fruit in my freezer, chocolate chip cookies were not the answer…so what did I do? Well duh? I looked for a little inspiration on Pinterest of course! I saw a few different variations of Almond Butter Cookies and decided to adapt this one. I don’t know about you but I have never been a big peanut butter fan, I will eat it but I probably would choose something else if I could.

The first time I tried Almond Butter I was completely sold, I like the flavor much more than peanut butter. And to be honest after making these almond butter cookies I don’t think I will going back to the traditional peanut butter cookies anytime soon!

Almond Butter Cookies with White Chocolate Chips – Adapted from Good Life Eats

Makes about 32 Cookies.


1 & 1/4 Cups of Flour

1/4 Teaspoon of Baking Soda

1/4 Teaspoon of Baking Powder

1/2 Teaspoon of Salt

8 Tablespoons (1 Stick) of Butter, softened

1/2 Cup Light Brown Sugar

1/2 Granulated Sugar

1/2 Cup Almond Butter

1 Large Egg

1 & 1/4 Teaspoons of Vanilla

1/2 Cup of Almond Flour (you can also substitute coarsely chopped almonds)

1 Cup of White Chocolate Chips (optional)


Line baking sheet with parchment paper or grease your cookie sheet accordingly. Preheat oven to 350 degrees Fahrenheit.

Combine flour, baking soda, baking powder and salt in a bowl and set aside. Beat butter until creamy and then add the white and brown sugar, continue beating until fluffy. Be sure to scrape the bowl with a spatula to ensure all ingredients are well combined. ( I find that there is always a large butter clump in the bottom of my kitchenaid mixing bowl).

Beat in the almond butter and vanilla until combined and then beat in the egg. Gently stir in your bowl of dry ingredients. Once combined, add the almond flour and white chocolate chips and stir until they are incorporated.

Roll cookies into balls, about 2 tablespoons of dough in each ball. (I used this portion scoop and it worked like a dream) Lightly flour a fork and press the dough balls down in a crisscross pattern. Bake for 10-12 minutes, until the edges are slightly brown. Let the cookies cool for a couple of minutes on the cookie sheet before transferring to a cooling rack.



Monday Morsels

It’s Monday…obviously. Unfortunately, for me,  it’s one of those Monday’s you wish you could stay in bed all day. I could use just one more day of the weekend…and oh, what a weekend it was. On Friday night I tried my hand at a hairstyle I had been eying on pinterest.

I’d say it was a success, here are the step by step instructions.

And then we went for dinner at Cinema.

This BLTA sandwich was absolutely delicious, the rosemary mayo really put it over the top. Dinner was followed by the Jason Mraz concert.

Can you say amazing?! He was out of this world!

I definitely did not want it to end.

On Saturday I took my niece to a birthday party at Chuck E Cheese and I think I had just as much fun as the kids. I forgot what a blast it is to play all of the games.

The girls took part in some illegal riding activity, which may or may not have been fully condoned by the parents.

And then on Saturday night I got to meet one of my best friends’ new puppy.

Bear! How cute is she! The puppy snuggles were followed by another friends’ art show and a girls night.

If you have noticed the 3 glasses of wine I am holding, don’t jump to conclusions! They aren’t all mine…

Let’s just say I certainly had my share of beverages and sadly due to an “inexplicable illness” the following morning I did not make it to the food cart fest. Devastating… I know!

On the bright side, two of my favorite shows are back on tonight, 2 Broke Girls and Hawaii Five O. It’s all about finding your silver lining people.

I really, really wanted. These absolutely stunning Old Gringo boots.

I am drooling right now…but at $600 a pair I think I will keep dreaming.

I Was Looking Forward To. Food Cart Fest at  The Waldorf.

I have not sampled a single bite from any of Vancouver’s new and exciting food trucks. What better way to do it, then all at once! The Food Cart Fest ran every Sunday throughout the Summer. Unfortunately, our busy schedule did not allow us to check it out. But fortunately, for us it was so popular they extended it until Sept 30…yessssss! I can not wait to stuff my face, have a couple beverages and enjoy the live music.

It sits under you cabinets and above the counter, perfect for utilizing counter space in a small kitchen. I would love to replace out counter top basket with this beauty!

That Made Me Laugh Out Loud.

When I am lost the first thing I do is turn down the music, silence is totally going to help me figure out where I am…not! If you don’t listen to country music you probably won’t get it….I will forgive you, but just this once!

Two words…yes please! Let’s talk about Pinterest for a moment, does anyone get as much joy as I do when people re pin the things you’ve pinned? I don’t know why but for some reason it is really, really satisfying…is that weird?

Last Thing Thursdays

I like today, I am not entirely sure why, I think it is the combination of my sparkly nails, polka dots, new coffee mug and sunshine! Sounds like a recipe for the perfect Thursday to me!

The Last Thing…

I Made. This delightful banana jam.

I had quite a few ripe bananas in my fruit bowl and I wasn’t really feeling muffins or bread, so I went with the next best thing. Jam! Who knew banana jam could be so delicious. I was skeptical of the idea, but I figured if it was a bust I would only be wasting 30 minutes and 5 bananas, I just love when things exceed your expectations. This gooey spread is the perfect topping for waffles and pancakes. Even better? Throw it on top of some vanilla ice cream…heaven!

That made me go HUH?! An article I read about the newest attraction in Vancouver, to go Zombie Hunting? Ummm, no thanks?

I was looking forward to. The weekend! I have an exciting shopping trip planned on Saturday and Sunday is the 7th annual BBQ on the Bypass.

There will be plenty of food, live music and tons of fun. And its free! If you are near by, you should definitely go….just sayin!

It is an absolutely beautiful day and I have filled this post with a few absolutely awesome things!

Was looking forward to. Target and Neiman Marcus are teaming up with 24 CFDA Designers to collaborate collections to celebrate the CFDA’s 50th anniversary. Target is known for partnering with designers to showcase capsule collections including Missoni and Zac Posen. The new list includes Alice + Olivia, Diane von Furstenberg, Tory Burch and Marc Jacobs.

I had my first one yesterday and it was glorious. It is easily my favorite caffeinated beverage and to say that I am excited about it is really an understatement. I captioned this Instagram photo “looks like summer, tastes like fall”. So appropriate for this beautiful Vancouver weather, I absolutely love Fall but I am not sure if I am ready for it quite yet!

Umm can I have some more? This was for sure one of the most delicious beverages I have tried in a while. And now I am on the hunt to find it so I can stock my fridge.

I told you how much I loved these when I went to Lucky’s Doughnuts and now I have a whole set to call my very own. Don’t you love it when people pay attention to you? Tea party anyone?
