Long Weekend Recipe Round Up

Can I get a TGIF? I am sure you are all as excited as I am about the fact that it’s Friday and that all of us Canadians get to enjoy a long weekend. I think Canada’s birthday is the perfect excuse to host or attend a get together, don’t you? The weather forecast is not too promising in Vancouver but I bet that a lot of you have a BBQ or Summer gathering r of some kind coming up. If not this weekend, than later on this Summer. Why not try one of these recipes to take along to your party.

Last Thing Thursdays

It’s a good day today, I don’t have an explanation for why but I’m going to run with it. It’s trying to really hard to be sunny outside and I have an afternoon of shopping planned in the US of A with my sister and my niece…maybe that explains it! On to the goods!

The Last Thing I…

Bought. This coral jacket and I am in LOVE.

I have been searching for the perfect windbreaker/waterproof shell for the longest time. In a city like Vancouver, it is key to have a stylish waterproof jacket, I mean who doesn’t want to look cute while it pours! It’s important…trust me! This Volcom Enemy Lines jacket has it all; awesome color, water resistant up to 1000 mm (it better not rain more than that I tell ya), light and comfortable. It’s funny how when you give up looking for an item it just magically appears right in front of your face.

Wanted to buy. Flat tan strappy sandals, is that too much to ask? I have been on the hunt for a month…maybe I should stop looking.

I tried these ones on at Target but my feet were too fat…sigh!

Craved. Dim Sum. I saw this Shrimp Shu Mai post over at Spoon Fork Bacon and now that is all I can think about!

Got Excited for. Our summer road trip to Montana. Now there’s something I can cross off of my Summer bucket list. Any suggestions for stops along the way? We kinda like to explore new places!

Summer Bucket List

Here in Vancouver, it feels like Summer hasn’t quite started yet. Between the rain and cooler than normal temperatures my mind has been wondering to all of the things I want to do this Summer. In turn, my brain is panicking trying to figure out how and when I will be able to do them. But I am determined to make every weekend and spare moment count.  And let’s face it, I am list person, so a Summer bucket List is oh so fitting wouldn’t you say?

Summer Bucket List

1. Go on a road trip to somewhere I have never been

2. Finish organizing our apartment

3. Host a party

4. Finish reading the Harry Potter series. I am only on book 2…ambitious I know!

6. Go camping

7. Buy mason jars. I just really, really want some okay!?

8. Spend an entire day watching Disney movies (a rainy day of course)

9. Eat Pinkberry Frozen Yogurt, I have been meaning to try it for MONTHS!

11. Make Sarasota’s

1 large bottle of Moscato or Riesling Wine 1 can of raspberry lemonade concentrate a splash of sprite crushed raspberries mix all ingredients together and enjoy!

I really tried to pick things that were going to be attainable so here’s hoping that I get around to doing everything. I will keep you posted on my progress don’t worry! Now let’s just cross our fingers for plenty of sunshine!

Monday Morsels…Literally!

Happy Monday to all of you lovely people! I wish that I had a really awesome recap of my weekend for you but unfortunately work, organizing my apartment and girls night in just don’t exactly scream exciting…tell the world about it Kim! So I will spare you the details. Instead I something a little bit sweeter (pun fully intended!), remember the oatmeal raisin cookies I promised to tell you about? Voila!

Chewy Oatmeal Raisin Cookies

Ingredients

1/2 Cup Margarine softened (you can also use butter if you prefer)

2/3 cup light brown sugar

1 large egg

1/2 teaspoon vanilla extract

3/4 Cup Whole wheat flour (you can substitute all purpose if you prefer)

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon salt

1 & 1/2 Old Fashioned Oats (rolled oats also work)

3/4 cups raisins

Instructions

Pre-heat your oven to 350 degrees fahrenheit and line a cookie sheet with parchment paper. In a large bowl, cream together the margarine, brown sugar, egg and vanilla.

In another bowl mix the whole wheat flour, baking soda, oats, cinnamon and salt together. Gradually stir this into the creamed mixutre until well combined. Fold in the raisins.

Place cookies about 2 inches apart on your parchment lined cookie sheet and bake for 9-11 minutes. The cookie may appear to be moist or undercooked on the top, don’t continue cooking them. This is where the” chewy” comes from! Transfer to a cooling rack and enjoy!

Genius DIY for Everyday Household Products

First things first, the winner of the designer band aid giveaway is msboyd! Yay for making injuries fancy and thanks to everyone that entered!

Moving on to something totally awesome…I am really in to the idea of re purposing old, useless things into new and totally useful things. I think that part of it stems from my hoarding tendencies and inability to just throw stuff away. I will  hide things in cupboards so Andrew doesn’t find them give things to friends or donate them before I just throw them in the garbage. I blame my mother entirely for this trait, and in turn she will blame good ol’ Gran who still has daycare toys just in case kids come over (she hasn’t run a daycare in at least ten years). So thanks Gran, because of you I find tips like these to be just amazing!

Have you ever stolen a hotel towel to wrap up your scorching hot flat iron? Guilty! I know it’s terrible but the last thing I want to find when I get home are ruined clothes. Thanks to this little idea from Creative Juices my towel thieving days are over.

Find out to make a flat iron cover out of a pot holder and DIY here. Ladies, you’re totally excited right now, I know it.

I can’t say that I have been known to hoard the tabs from pop cans but after seeing this genius idea from Idea Bottle, I am definitely going to start!

These little tabs are going to allow me to double my closet storage! If you are like me, a lack of closet space is always an issue! Even if your boyfriend has graciously donated the entire semi walk in closet in the bedroom to you and his clothes now shares a closet with the coats in  the entryway. True love I tell ya! But even having the entire thing to myself I still struggle to have enough space…well not anymore kids! From now on when Andrew says I can’t buy something because I don’t have room in my closet I’ll show him!

You know that really nice tins that cookies or chocolates come in at Christmas time…you always want keep them right? I mean you never know when you might need to use them to store things in. Okay, maybe that’s just me. But I think you are going to start keeping them know.

I absolutely love the idea of re purposing these tins to use as gift boxes. Cynthia Shaffer uses a winter theme but you could also use them for birthdays, showers or any other type of gift. Mix up the colors, add a little ribbon and you are a crafting genius.

Hopefully these little tips inspire you to re purpose something old into something new.

If Madison didn’t live in Iowa we would be best friends I know it. We both have blonde hair (important), we are the same age, love to cook and enjoy writing for all of you lovely people. Instant BFF’s I tell ya!

No but really, she writes an awesome and informative blog and her no fat talk Tuesdays are incredibly inspiring. It’s a great spot to find recipes and I am a dedicated reader of Espresso and Cream…you probably should be too! I mean really, have I let you down yet?

Last Thing Thursdays

Yesterday was the first day of Summer and amazingly Vancouver was fortunate enough to actually see some sun…thank god! On that note

The Last Thing I…

Was baffled by. My fortune after Chinese food the other night…definitely not what I was expecting! I even checked both sides to make sure I didn’t miss something.

Awfully demanding, wouldn’t you say?

Did. Visited an iconic Vancouver attraction I haven’t been to in years. I have been at a conference for work the past couple of days and I was lucky enough to attend an event at the Capilano Suspension Bridge (thanks Vancouver Coast & Mountains!). Check out the new Cliffwalk…what a view!

Gave myself a fail for. Not re reading my text prior to sending and then realizing it said perverting instead of Pemberton. Damn auto correct!

Wanted to buy. The COCO bfriend bracelet. I adore the bfriend bracelets, they are so freakin cute! The pearl and gold combo totally sold me and I love the fact the designer Monika of The doctor’s closet is a Vancouver girl.  How awesome! You should buy one…just sayin’

Pinned. This dress, I want it. That it all.

Made. These classic Oatmeal Raisin Cookies.

And yes they taste as good as they look. Just ask Andrew he ate at least 17 of them. The recipe is on its way…promise! I gotta have something to keep you coming back don’t I? Baked goods are usually the answer.
