Remember a month or so ago when I told you about those delicious Jello shots, well they were to celebrate two of my best friends birthdays. While the hostess with the mostest slaved away layering those magnificent (but dangerous) shooters, my contribution to the party was Birthday Cake Popcorn and let me tell you, it was a smashing success. The salty and sweet reminded me of kettle corn but the cake batter just takes it to a whole new level.
This popcorn is a sure-fire way to be the hit of any party. I promise, once the word spreads of your delicious concoction you will bright smack dab in the middle of every social circle. It is just screams…yes I am that awesome!
Birthday Cake Popcorn – adapted from The Tasty Kitchen Blog
1 Box Yellow Cake Mix
1 Package (3 cups) White Chocolate Chips
1/2 cup margarine
12 cups of popped popcorn (I used 2 bags – butter flavor)
1 Cup Sprinkles
Melt the chocolate chips and margarine together in a medium-sized saucepan until they are smooth and well combined.
While your chocolate is melting pop your popcorn and then pour it into a large bowl. Also, line a cookie sheet with parchment paper.
Once the chocolate mixture is nice and smooth stir in the box of cake mix and remove from the heat.
Pour the hot mixture over the popcorn and then add sprinkles until your heart is content. I recommend mixing with tongs or wooden spoons, treat it like you are tossing a salad. Be sure to coat as much of the popcorn as possible.
Once you have thoroughly mixed everything pour it onto the cookie sheet to cool.
The chocolate and cake batter will harden on your popcorn and provide you with an amazing sweet treat. Keep in mind you can theme this to suit any occasion; Christmas, baby shower, or even Halloween.
