Now that’s a mouth full isn’t it – pun fully intended! A couple of weekends ago I went on a bit of a baking extravaganza, ever since then I have been waiting for the perfect day to post this recipe, and guess what? That’s today! This gloomy Vancouver day definitely calls for a glass of wine and one of these – Chocolate Peanut Butter Swirl Blondies. Blondies are the new brownies minus the chocolate. Well, I guess that doesn’t make them the new Brownies at all. Regardless, they are delicious.
Chocolate Peanut Butter Swirl Blondies – Adapted from Jenna Weber of Eat Live Run
1/4 Cup of Butter (1 stick)
1 Cup packed light brown sugar
1/2 tsp of salt
1 tsp of vanilla extract
1 cup of all purpose flour
1/3 cup peanut butter (creamy or crunchy whichever you prefer)
2/3 cup chocolate chips (I used 1/3 white chocolate chips and 1/3 milk chocolate)
Pre-heat your oven to 350 degrees and grease and 8 inch square baking pan.
Brown your butter in a pot on the stove top. And by brown, I don’t mean burn. You will need to continually stir it for several minutes until it turns from a yellow color to a golden shade of caramel.
Pour the browned butter into a large bowl and add the brown sugar. Beat for a few minutes until it is nice and creamy. Next, add the egg and continue beating.
Add the flour, salt and vanilla and then beat until all of the ingredients are combined. Next add the peanut butter and swirl it into the batter. Following that, gently fold in the chocolate chips.
Pour the batter into your greased pan and be sure it is evenly distributed. Place in the oven for 20 minutes or until the edges separate from the pan. Let them cool, slice and serve!
